Steak tartare, fruit and a glass of Lambrusco

"Later during her Scala reign, Callas and her court moved from Savini's to Biffi Scala. A permanently reserved table, slightly to the left facing the entrance, allowed Callas to scrutinize the coming and going of Biffi's patrons without being in full view herself. It relaxed her to watch the parade, while she devoured her steak tartare, fruit and glass of Lambrusco, her favorite red wine. After finishing her meal, she would rise, bid friends and colleagues good-night and head for home accompanied by Battista.
